organic fiesta lime quinoa salad
(adapted from natural philosophy)
ingredients: || increase or decrease amounts of any ingredient to fit your needs ||
organic quinoa (2 cups) || soaked overnight if possible
2 avocados
1-2 organic peppers (any color you want! i used all green because they were in sale, but a mix of yellow and orange would work great too)
1-2 organic tomatoes
1/2-1 organic purple onion (optional)
1/2 bunch organic cilantro chopped || in the pictures, i de-stemmed + put the whole leaf in (I’m definitely going to chop it up next time)
dressing: || decrease or increase amounts to taste ||
organic cold pressed sesame oil (1/2 cup)
bragg’s organic apple cider vinegar (1/4 cup)
organic onion powder
organic garlic powder
honey or agave (2 TBSP)
organic lime juice and/or lime essential oil if you need a stronger flavor
eden’s organic brown mustard or dijon mustard
blend all ingredients in a high speed blender (blendtec/vitamix)
pour over quinoa and mix

tips:
I dipped some organic multi-grain chips in this
you could also make some pretty spectacular nachos || melt organic cheese on chips + spoonful fiesta lime quinoa on top (think of this as the salsa) + corn +olives + organic chicken
